Kale, Black Rice, and Pomegranate Salad

It’s LUNCH time!  This is one of my ALL time favorite power lunches.  You can not go wrong with the kale, black rice, sweet potato, apple, and pomegranate salad.  It is hearty, satisfying, and fuels you with super foods and nutrients to tackle anything that comes your way. Want to make your life easier?  Prep the black rice and sweet potatoes on Sunday evening!
