Where do I begin? This recipe is the perfect combo of delicious and nutritious. A friend from work introduced me to the Japanese sweet potato and I haven’t looked back! These little beauties pack a serious nutrition punch. They are loaded with potassium, iron and magnesium as well as vitamins A, C, E and B6. These vitamins act as powerful antioxidants and can prevent cellular damage from free radicals in the body. Now add in collagen powder, blueberries, and pecans and you’re GOLDEN…just like the flesh of this scrumptious tuber!
